Last night I was out and about running errands and I came to a sad reality.  It’s cold.  And not the good kind of just a little chilly cold.  Like running for the door cold.  Sad but true.  As I was perusing the aisles of Target…I realized this cold weather may not be such a bad thing.  The cold means extra layers and fluffy scarves.  Warm mittens and toasty boots.  There is nothing I love more than sitting on the couch in a big snuggly sweatshirt with a hot cup of coffee.  And right now…this is the perfect weather for it.

 

So today on Fashion Friday it’s all things cozy.  These are my picks for snuggly, cold weather goodness.

When Gary and I first started dating…I decided I was going to be domestic.  I mean cooking for one always seemed pointless…but now that I could cook for two…it seemed exciting.  This was the beginning of my mission to make every food I loved healthy.  Enter the swaps.

Poor Gary…the meals he had to suffer through were horrendous.  I mean…some things just aren’t meant to be healthy.  I attempted to make scalloped potatoes with squash instead of potatoes.  It turned into a soupy mess of disgustingness.  I tried to make Fettuccine Alfredo with spaghetti squash.  That one ended in tears.  I quickly learned squash was not my strong suit.  Even after all my disasters…Gary still tried every “healthy” thing I tried to make.  And for that I love him.

 

Not all my attempts were failures.  Some turned out swimmingly and are dishes I cook all the time.  One of my favs is my healthy version of mashed potatoes.  I love potatoes.  Ok..let’s be honest.  I love carbs.  But carbs are not good for the waistline so I had to figure out an alternative.  Enter…mashed cauliflower.  If the idea of eating mashed up cauliflower turns you off…try it!  I promise you will change your mind.

 

Mashed Cauliflower

 

1 Head of Cauliflower

1 Potato*

16 oz Chicken Broth

1/4 cup 0% Nonfat Greek Yogurt

Dill

Salt

Pepper

 

*Adding one potato gives it more of that mashed potato consistency.  I’ve made this several times without the potato (even healthier) and it still awesome.  It’s just about preference. 

 

1. Chop cauliflower into 1 inch chunks.  Peel potato (or leave skin on if you prefer).  Chop potato into 1 inch cubes.

 

2. Put chopped cauliflower and potato into large pot.  Add chicken broth.  Add water until all contents are submerged.  Boil until soft.  About 15-20 minutes.

 

3. Drain liquid and return contents to the pot.  Add greek yogurt, dill, salt, and pepper to taste.

 

4.  Using a fork or masher, mash all contents together.  Make sure all the ingredients are mixed in and you have your desired consistency.

And viola!  You have a healthy, lightened up version of mashed potatoes.  The best part?  A one cup serving of mashed cauliflower has about 120 calories.  A cup of regular mashed potatoes (not even the cheesy kind) can have almost 400 calories! After all the disasters…I can honestly say Gary actually looks forward to when I mashed cauliflower nights.  Fettuccine Alfredo…not so much.

Color.  It’s around us all the time…everywhere we look.  Right now mother nature is sporting her most flattering colors and I can’t get enough.  All the leaves changing and warm colors lining the streets…makes my heart happy.

Every so often I go through color phases.  I went through a black phase and only wore jeans and black t-shirts.  I thought I was so chic.  I went through a neon phase…whew…glad that one is over.  Right now I’d say I’m in a fall phase.  I am obsessed with all the colors of fall…mustards…olives…raspberry.  So today on Fashion Friday I thought a little fall color could do us all some good.  So these are my color obsessions of the moment…

 

The dress in the top left corner is my birthday dress…and I’m very excited about it.  🙂

Ok…I say raspberry…some may say maroon…either way I’m in love.  I love the dark yet rich color for fall.  My nails are painted this color as we speak.  🙂

I am officially in birthday mode! It’s going to be non-stop celebrating until the big day.  And I plan to wear all the above colors the entire time.  🙂

So…I’m just going to be honest.  I totally have a friend crush on Matt and Erin.  See…I met Matt earlier this year when I hid behind a tree and photographed his proposal to Erin.  I met Erin a few hours later…freshly engaged…and I’m sure she was wondering who they heck this girl was hiding behind a tree.  I’m all about first impressions.  🙂

 

Last weekend we got together…in the same spot as the proposal…and took some engagement photos.  Matt and Erin are hilarious to say the least…so much fun…and the kind of people you just like being around.  They are constantly laughing and it is completely contagious.  There were a few times where I was literally cracking up…like tears in the eyes, side hurting laughing.   See what I mean about a friend crush?

 

I am so so so excited for their wedding next May…I know it going to be spectacular.  For now…here’s a little engagement photo goodness…

Dane Sanders is one of those people that when he speaks…you listen.  He tells you how it is and is fabulously unapologetic.  He has this undeniable desire to help others and it is infectious.   And I think it’s safe to say that after hearing him speak last night…I’m infected.

 

In case you don’t know who Dane Sanders is…he is a photographer/entrepreneur/speaker/author extraordinaire.  He wrote the book Fast Track Photographer…later followed by The Fast Track Photographer Business Plan.  I’ll be honest…I’m only about 1/4 of the way through his first book but so far so good.  When I heard he was giving a free talk, of course I jumped on the opportunity.  I wasn’t sure what to expect but I walked out of that room last night with a completely different way of thinking.   A different way of looking at things that just seemed to make so much sense.

 

See…Dane operates off a few key principles.  He’s broken down this incredibly overwhelming, crazy, intimidating industry we’ve all chosen and turned it into something attainable.  Something that’s not that intimidating after all.  It basically breaks down to:

1. Figure out where you are

2. Figure our where to want to be

3. And work your little hiney off to get there.

 

Simple?  Yes…  But when you really sit down and think about it…we all think that is what we’re doing.  But when it really comes down to it…what are we actually DOING.  What action are we taking to get to where we want to be.  I am as guilty as anyone.  It’s always…well once this happens then I’ll do this.  Well as soon as I get this then that will happen.  I can talk for days about all the things I’m going to do…and how I really want to be successful…but the hard question is…what am I doing about it? 

 

Something he said that really stuck out to me was “What you’re hearing will limit what you’re not hearing.”

That can be interpreted several ways…which is exactly the point of what it is saying.   Your perspective or state of mind or Frame as Dane calls it…determines what you are hearing.  If it is stuck in a negative place…that is all you will hear.  If you decide to focus on how everyone else is more successful than you…or how it’s so unfair that you haven’t “taken off“…that is what you will get.  If you change your perspective and start focusing on what you can DO to create your own success…that is when things will change.  Or at least that’s what I took from it.  🙂

 

I know first hand how frustrating and incredibly hard this profession is.  No one decided to be a photographer because it was easy…at least I didn’t.  Something about the things Dane said last night just stuck.  They made sense.  A lot of people may read this and think I just wrote a bunch of nonsense that everyone already knows.  But for me…this is a chance to take control of my way of thinking…my actions…and ultimately my success.  I challenge you to do the same.
